Business is better than ever, Saturdays are consistently full, with a growing waitlist, as one of my Saturday regulars said, “someone probably has to die for new clients to get in on a Saturday!”  Yes, I am truly loyal to my regulars who have continued to be in the Saturday loop! Good things come to those who wait…

never enough time in the day!

Fall is for some reason, our busiest Massage season.

Maybe it is because with that first chill in the air, everyone’s bodies start to twinge, joints begin to ache and exhaustion sets in.

The body says, “hey remember me? can I get a massage now?”

In Seattle, in particular, I think we tend to neglect getting massages in the Summer because the weather is great and we’re just not feeling the need.  Then Fall, everyone I haven’t heard from in months comes in and we are booked, booked, booked!  I wish Massage was more like Pizzas and we could just keep making them, but unfortunately there are only so many slots in a day.   Especially if the day is a Saturday, the most popular massage day of the week.

So hopefully, you will plan ahead and know that good things do come to those who wait!

As I always tell clients who call on Saturday afternoon, hoping to get in same day, the truth is if you could find a massage therapist who had an opening on a Saturday afternoon, same day, it probably would not be worth your time or your money because most of the really talented massage therapist I know are always booked out on Saturdays!  I know how it goes, I have done the same thing with a haircut, trying desperately to get in last minute because I have put it off too long and my hair needs it right now.  However you really do get a better service when you think ahead, schedule ahead.  I always joke that this is why I have 90% female clients and the 10% of males I have are married to those females.  It is because men are worse about planning ahead, they tend to call for same day appointments which I rarely have.  Females tend to be better about booking out.

Speaking of booking out, remember that the Fall Back seems to comes a bit later this Season, Sunday November 4th 2012.

Chicken Chile Verde Season

Chicken Chile Verde

Here you go Nancy, this is how I make Chicken Chile Verde.

This Chile Verde will keep colds at bay as we enter this virus season!

If I feel even the slightest tickle in my throat, I just make this and I’m cured!

You can make this in a crock pot, too, it is so nice to come home to,  your whole house will smell divine when you get home.  I have the hardest time following recipes and I love to experiment when cooking.  I just made this Chile Verde the other night and we happen to have a ton of Dino Kale ready to eat in our garden,

So I added Dino Kale, not typically found in Chile Verde, it went amazingly well.

Feel free to adapt this recipe however your heart desires…

We had it with Polenta cakes and it was Nancy who taught me that I could bake my polenta on a cookie sheet in the oven, instead of frying them in a pan (where you’re always tempted to flip to early!) now I just put a little oil on a cookie sheet, put globs of polenta down like cookies and bake at 350 for 10 minutes, flip and bake another 5-10 minutes, easy peasy.

 

2 lbs Chicken Breast or Chicken thighs, sliced into bite size pieces

salt

pepper

flour

3-5 tbls grapeseed oil

 

Dredge the chicken pieces in the flour, salt, pepper combo, then fry up in

Grapeseed oil until golden brown and thoroughly cooked. Set aside.

 

Walla Walla onions, Poblamos & Anaheim Peppers, Tomatillos

3-5 tblsp Olive oil or grapeseed oil to coat a cast iron pan or Dutch oven or crock pot…

Add to the pot and simmer:

 

1 large Walla Walla onion, chopped fine

5-7 garlic cloves (depends on size & strength)

3 Poblama peppers, chopped fine

3 Anaheim Peppers, chopped fine

8 tomatillos chopped fine, like you would a tomato

3 Yukon Gold Potatoes, chopped like you would for stew

1 zucchini chopped soup size

1 Bay Leaf

1 cinnamon stick

2 tblsp Oregano

1 tblsp Cumin

1 tblsp paprika

1 tblsp chili powder (I like Chipotle Chili powder)

Salt & Pepper to taste

2-3 cups Chicken Broth enough to thoroughly cover all your ingredients.

Add the chicken to the mix and simmer for 1-2 hours until everything, including the potatoes are cooked well.

You can serve this over rice or serve with corn tortillas to make tacos.

Tomatillos and Peppers are loaded with Vitamin C, the garlic, onions, oregano and chicken broth create a powerful immune defense! Love this dish.

 

 

 

 

 

Plum Chutney

This cute Squirrel is enjoying one of our Italian Plums on our fence, the harvest was especially plentiful this year!

I enjoy plums as much as anyone, but there’s only so many you can eat & give away before they go bad, only about a 2 week window.  As I searched the plum recipes, most of them were pastries, plum cakes, plum tarts, my family couldn’t possibly eat that many plum sweet treats, we had several huge baskets full!

Then my sister in law suggested Plum Chutney, yes! Better than plum jelly with a great shelf life!  I read many recipes, but eventually adapted my own recipe, here it is:

Plum Chutney

5 cups Plums

1 chunk ginger

5 single garlic cloves

1 1/2 cups Apple Cider Vinegar

 

2 cups Sugar

1/4 cup Blue Agave Syrup

5-7 Star Anise

1 stick cinnamon

1 vanilla bean

ground clove

ground chili powder

cayenne

1 tblsp salt

fresh ground pepper

I seeded all the plums, then put them into my Nutribullet with the garlic cloves (peeled), whole chunk of ginger and Apple Cider Vinegar.  Puree’d this combination.  Then added it to a large boiling pan with Sugar, Agave Syrup, whole star anise, cinnamon stick, vanilla bean, cloves, chili powder, cayenne, salt and pepper.  Bring this combination to a boil while whisking constantly, let boil about 3 -5 minutes until you get a nice foam.  Then turn it down to low, simmer without a lid for 30-45 minutes, until it thickens (like a thick syrup, not a jam).  Your house will smell delightful.

Continue with canning process, get your jars ready, as you funnel the Chutney into the jars, it’s easy to remove the Anise Stars, Cinnamon stick & vanilla bean (though they will be hot, may want to use tongs!)  I like to process my Chutneys just like Jam, just to be sure, I put them in a hot water boiling bath for 10 minutes, I’d hate to go to all that effort and have it spoil!

Now it’s time to get some Samosas for dipping into this delightful Chutney & I can store it all year, unlike pastries that would have to be eaten immediately.

Puree the Plums, garlic, ginger and apple cider vinegar in your Nutribullet

Boil plums & sugars until foamy, then simmer down

As you funnel into jars you can remove the Star Anise, Cinnamon stick & vanilla bean.

Yum Yum yummy Plum!

I am loving this Plum Chutney so much, I want to bathe in it, maybe I will incorporate into a Spa Treatment, like a body wrap with Plum Chutney :)

And now for the health benefits which include blood building and increasing fertility, 2 of my favorite health benefits!

Health benefits of Italian Plums

 

•  loaded with dietary fiber they increase metabolism and cure constipation.

•  High in Vitamin A which promotes healthy eyes, skin and supports respiratory system.

• Contains some hard to find anti-oxidants such as Lutein, and Zeaxanthin, which fight free radicals and help prevent cancer.

• Plums are rich in Iron, fluoride and potassium.

• Plums are blood building, increasing your blood chi, just before winter, nature is so wise!

• High in other essential vitamins such as C (immunity) B-6, Niacin and the rare Vitamin K.

• Plums have been shown to prevent Osteoarthristis, prunes can increase a woman’s bone density.

• In Chinese medicine Plum is considered a neutral food, perfectly balanced yin and yang, so it is a wise food to eat for both Yin and Yang constitutions.

• Plum juice has been said to cure heartburn.

• Plums support a healthy blood sugar level, can be beneficial to diabetics.  Plums can help with Weight Loss!!!

• Plums are extremely alkaline which benefits an alkaline diet.

• Used in treatment for irritable bowel syndrome, normalizes intestinal disturbances.

• Plums can normalize menstruation, improve fertility.

• Overall plums increase vitality!
